Easy Pineapple Upside Down Dessert

Food blogger, I am not…but when I find something that is quick, easy and delicious, I feel the need to share.

When I was getting ready for the big camping trip, I decided to research some neat fireside recipes. I came across a bunch of great ideas, but the one I thought looked the most delicious was the Fireside Pineapple Upside Down Cake. I loved everything in it. So I purchased everything I needed to make it…but then we ran out of time and room in our bellies…so I brought all the ingredients home.

Last night I had an idea to bring this simple dessert back to life at home.
So I gathered all the ingredients:


And then placed them on a sheet of foil that I sprayed with cooking spray:


And then I put the l put the kids to bed and waited for them to fall asleep (so I would not have to share, obvi).
When I returned to the kitchen I placed the delicious ingredients in the oven on broil for 10 minutes. And when it was finished I put it in a cute little bowl and topped it with whip cream and enjoyed…All by myself!


Let me tell you, it did not disappoint! And it also did not break the bank calorie-wise, either.


I will be making it again…probably tonight since I have everything I need!
Here are the goods:

Prepared pound cake…any will do (about a slice)…cut into bite size chunks
1/2 cup Pineapple Chucks in juice
2 teaspoon so brown sugar
A sprinkle of cinnamon
Whip cream to finish

On a piece of foil sprayed with cooking spray place all the ingredients (except whip cream). Broil on high for 10 minutes. Top with whip cream and enjoy!


Target is Awesome

Who doesn’t love Target?
I think if your don’t you are kind of un-American.
Not really, but who doesn’t love that place?

Where else can you go for an hour of clean family entertainment and also pick up a gallon of milk, a hose nozzle and tampons?

Megan always asks to go to Target to look at toys and today I was in the mood. Not that we didn’t have a full day before Target, but it was the icing on the cake so to speak.

I spent almost two hours in exercise classes today. I am hooked on Cardio Mix which is like kick-boxing, step aerobics, and weight training all in one. Boy, am I sweaty at the end of it. I also love Power Core and Muscle Max. I get such a high in those classes. If you would have asked me in January if I would be going to aerobics class everyday at this point I would have given that a big hell-to-the-no. But I am finding that fitness classes are giving me that push I have needed to move forward in my weight loss. Since I spend zero time lifting weights on my own, it gives me a great opportunity to learn technique and get a really awesome work-out in on the daily.

I also love the companionship and the team effort that happens in class. Even though the are all working at individual fitness levels, there is something about being “in this together” that makes me want to join in, work a bit harder, and push myself to a level that makes me proud.
I was thinking today as I was doing like a million and one chest presses, “you deserve this…you owe it to yourself to push yourself harder than you think you can, your results will be a reflection of the effort you put forth at this moment.” Those words were so true, so clear. My journey is mine. I am the owner of my life…not my husband or my kids or my mom or my friends or my boss or my students…it is just me. I deserve better than I give myself on most days. I need to stop and recognize that I, too, am deserving of all the love and the graciousness and the hard work that I give everyone else.

That is deep. It feels good. I feel good.

Finally, I tried some chicken sausage per my friend Beth’s suggestion. I have to say, I loved it. I ate it with eggs this morning and pasta this evening and it was darn good. I need to find some more food variety in my life. I eat the same things over and over again until I am sick of them. I am so bored with chicken breasts. Tomorrow I am going to try a black bean burger that I picked up in the freezer section last night. I am hoping for the best. I do love a great veggie burger.

Dinner time: Taco Soup

I said it before and I will say it again, I am not a food blogger. But, when I fall upon something great I feel the need to share.

I had Shawn’s family over for dinner last night. Really, we invited friends over and they bailed due to illness at the last minute. Lame. HA! I had to call a back up because I had already made a huge crock-pot recipe and needed some mouths to feed.

My friendly friend Beth sent me this awesome recipe for Taco Soup in the crock-pot. It was by far the easiest recipe I have ever made…if you can open a can, you can make this soup! Side note, my can opener broke mid-soup making and it was a crisis. Then I fixed it and moved on. The original recipe came from Stephanie O’Dea’s blog “A Year of Slow Cooking”.

Beth made this soup for her brother’s going away party and Shawn loved it, so I knew if I got it right it would be a winner winner taco soup dinner!!!! I served it with some jasmine rice and cheese quesadillas on the side. It was great and filling and delicious. My father and law even commented this morning about how good it was. This week is going to be a busy open, but short…we have off on Friday. I am looking forward to a day off and some quality time with my bed! I don’t feel like I have caught up on sleep since coming home from camp. I had so much fun last week but I missed home like crazy.

Let’s Eat!

Because I have been on my “plan” for a week and a half, I am now an expert. I thought I would share with you some off favorite discoveries on my journey. Here they are in pictures:











Everything is better with a can of green beans or some fresh sautéed veggies thrown in there for bulk and nutrients. As I have said before, I am not feeling deprived, but I do eat a lot of fresh fruits and vegetables along with a couple of snacks each day. My favorite snacks are Full Bars, a bag of veggie straws, and Slim Fast peanut butter bars. Oh, and I start dinner every night with a huge salad packed with lots of yummy (measured) items.

Food Blogger, I am Not

I am not a food blogger…I would never claim to be one. I am a full time working mom that is trying to lose weight. I try and go to the gym after work everyday which means that my nights are short and when I walk through the door with my gym bag and toddlers in hand we are ready to eat. In an effort to lose said weight, I have been trying to find some “healthier” go-to items to get in the pan and in my belly in less than 15 minutes. Sometimes they are winners (hello, Target frozen veggie mixes, I love you!) and sometimes they are major misses.

Last night was a BIG LOSER! I hated every bite. In fact, I only got through a few bites before I had to just say no and call it a loss. If you are ever tempted to try this, please know you have been warned.

The thing is, I have tried a bunch of items from Thai Kitchen and I have loved them. I have even made the Pad Thai dish from the recipe on the back of the Lite Coconut Milk and thought it was fantastic. This, my friends, was awful. No amount of extra soy sauce, lime juice, or peanut butter could help it. The noodles were sticky, the sauce was bland, and the only thing that tasted good was the egg that I fried in preparation for the dish.

I am not really in a food rut, I have been trying a lot of clean, healthy, homemade recipes and I have been loving them. I have been eating a ton of veggies and am even going to get around to eating one vegetarian dish a week. Last night was just, well, a miss and I am okay with it. Except I am so cheap I hate throwing food money away.

One last thing…Ellen was so funny yesterday. She had on texts that the words had been auto-corrected to say the most inappropriate things. Hilarious. Talk about a good season, she is awesomely funny!
